After harvesting, fruits and vegetables remain living organisms, absorbing oxygen from the air, releasing carbon dioxide, water, and heat, while consuming their own nutrients. Controlled atmosphere storage is the process of controlling the concentration of oxygen, carbon dioxide, ethylene and other gases in the storage environment to significantly reduce the respiratory intensity and self consumption of fruits and vegetables, reduce water loss, decrease the consumption of nutrients, delay the aging process of fruits and vegetables, and achieve long-term storage and preservation.
